Made it to Cali

Today I flew from NYC to Orange County, Ca and although it’s supposed to be for vacay, I haven’t stopped working! I got to the airport nice and early and enjoyed my first Dunkin Donuts eggwhite flatbread paired with iced coffee.

A pretty healthy airport option if I do say so myself. Fast forward to landing in Orange County and heading straight to the most ginormous Whole Foods I’ve ever encountered.

Hello there fresh fruit and veggies. Next I headed straight to the beer section. I mean, how does one choose here?

I picked up a nice summer ale.

Dinner with the parents tonight was outside in the cool Cali weather, complete with bbq salmon and my new salad obsession: tomato, avocado, corn, mozzarella with some EVOO, salt, pepper and lemon juice on top. I got these gorg organic heirlooms and gimundo avocado at WF.

A little soy ginger marinade action

For now, I’ll leave you with this face:

Saturday’s beach run

Friday I went down to my shore house after work since I knew Saturday was supposed to be beautiful. I woke up Sat at 7 and knew that I wanted to try and go for a run. The weather was perfect, not too hot, but soooo sunny. I forgot to pack a hat which was a total fail. I was all taped up with my hot pink tape ready to go. On Friday at the chiro/PT place I asked if he should tape me up since I had a far walk from the train station. No way was I going to tell them I was planning on running. They just don’t get that saying I should do absolutely no exercise doesn’t work for me. So here I am ready to go.

You’re jealous.

I set out to run 3 miles along the boardwalk on the beach. About 1/2 mile in the knee started hurting but then the pain dissipated as I settled into the pace. Towards the end I had a killer headache, probably due to the squinting. Passing all the other runners, walkers, bikers I was in my element although there was definitely a struggle that made me think, didn’t I used to enjoy this? Then I remembered that it was the feeling I get when I’m done, not necessarily as I’m running, that I enjoy.

The first mile was 10:42, the second was 11:06, the third 10:47, finishing the 3 in 32:35. Not complaining.

I just cannot get the full body shot like TMB does.

After the run, I sat on the porch to check some email, catch up on some blogs. I just discovered I can get Internet down at the shore, now that the summer is over.

And then it was time to hit the beach. Look what I found while reading my Fitness magazine.

Caitlin is everywhere these days!

The beach was perfect.

Now I’m back in the city and very excited about 2 other things I will tell you all more about when I try them!

Got this to review and won these

from Pancakes N Pajamas!

How was your weekend? I’m going to Cali on Tues for a few days of vacay in the OC!

Jazzing up a boring meal

Last night I hit the gym as planned, and focused on weights. I remembered some of the exercises I’ve done in total body conditioning and was able to do a solid 30 min. That’s a lot for me to spend on strength training. For dinskies, I heated up a Healthy Choice tomato basil soup. It’s pretty good, but I always forget how strong the basil is in this kind. I also had a Smart Ones frozen spaghetti primavera. In order to make it a little bit more filling, I added in the 1/4 block of tofu I had left. It blends perfectly with the sauce and veggies. Here’s a pic, although it’s very dark.

Overall a pretty good pantry/freezer meal. I also snacked on some dried mango and cereal (not together). I always need something to eat in bed while watching TV. It’s a problem, but at least I’m not housing down chocolate.

Today is off to a meh start. It’s bagel Fridays in our office and I felt like biting the bullet and going all out with a whole wheat bagel (partially scooped out), one side with lox cream cheese, the other with veggie. Sometimes you gotta kick Chobani to the curb and go full force. Not sure I’ll make it to the gym since I have the chiropracter/PT at lunch. I do plan to try to go for a longer, maybe 3 or 4 mile run this weekend.

What do you have planned?

5:30 wakeup fail

Sometimes a workout just isn’t meant to be. That’s what happened last night and this morning. I was supposed to have Fitrition in Central Park yesterday after work. I was really looking forward to a nice butt-whooping by Leanne. But due to the incessant rain it was cancelled. So instead I headed to the gym. Did 30 minutes on the eliptical and was a sweaty mess. Usually that machine doesn’t do that to me so I was pleasantly surprised. Next I ran a half mile on the treadmill, before stretching and heading home to my polenta casserole leftovers.

This morning I was planning to take my 6:15am total body conditioning, but there was no way it was happening. I woke up a few minutes before 5:30 and reset the alarm to 7. I’m bummed because I like weights classes since I tend to not do weight training on my own, or for more than 10 minutes. But I’ll still hit the gym after work like my plan for the week says. Tonight’s din? WW frozen meal is calling my name. Probably because I devoured the rest of my polenta 🙂

Do you get disappointed when a workout is cancelled or you sleep through it?

Left-sided

6:15 am Total Body Conditioning class? Check! A hearty bowl of oats with a spoonful of PB?

Obvs a check.

Yesterday, I had an interesting session with my chiropractor. Turns out the right side of my body hates me. We all know my right knee issue. Well I was laying on my stomach and he tried to touch my heels to my butt. Left side? No prob. Right side? Not so much. Add super tight quad to my list. Later on he asked me if I ever had any ankle problems (which I haven’t). He went to “adjust” aka crack the left foot and it went. The right? Totally locked. He couldn’t adjust my ankle. So basically my hips constantly fall out of allignment leading to my left leg being shorter than the right. My right quad is tight, the right knee is constantly achy and the right ankle is locked. Seriously?

Last night I cooked up a fabulous dish, if I do say so myself. After realizing that I usually use a baking dish and not a sheet, I improvised and turned it into a polenta casserole. Total hit to my tastebuds. I started by throwing in a bit of EVOO and minced garlic in the pan.

Next saute 3 chopped carrots for about 7 minutes, then add the zucchini. I used 2.

Next up I added baby bello mushrooms. Make sure you wipe them with a damp paper towel first.

Next up I added 2 cups of marinara sauce. I could use a whole jar, I love it so much. Also threw in frozen peas.

Let that simmer while the oven preheats to 350 and you slice up already cooked polenta that comes in a tube. This is definitely a speedy cook’s best friend.

I ended up switching over to a baking dish and made a casserole/lasagna looking thing. It ended up being genius.

Baked for about 20 minutes.

Enjoy! 1 serving (a quarter of the dish) is only 4 WW points.

Laying out a game plan

I work to my fullest potential when I’m in a routine and have a game plan set. Today, I realized, I’m not going to get anywhere with SOWL or just feeling better about myself, if I don’t set a strategy. So here goes the week’s plan.

Start counting points on Weight Watchers. I have a 3-month plans I already paid for, so it’s time to start using it. Today so far I’ve had 3 points for breakfast (Plain, nonfat Chobani and a small banana) and now I’m having a mondo salad for lunch.

Calculated 4.5 points, thanks to Beth‘s help. (1 for the head of romaine, 2 for 1/4 package of tofu, .5 for 1/4 cup of corn and 1 for 3tbsp Newman’s Own lite sesame ginger dressing).

Tonight I plan to cook polenta with veggie marinara on top. I’ll figure out the points today.

This week’s workout plan:
Mon- 2 mile run on treadmill (completed, very sweaty from it!)
Tues- Total body conditioning before work
Wed- Fitrition w/ my fave trainer Leanne
Thurs- Total body conditioning before work
Fri- Off or workout during lunch

How does that sound?

How to multi-task

My body finally realized how exhausted it was and I slept until 11:30 this morning. I don’t think that’s happened in years. Not only am I an early riser by nature, but I don’t like the day to get away from me. So I was thrilled when I actually slept in this morning. Because I had some errands to run, but still wanted to get in some exercise, I decided I’d walk to my appt, then run back home. So I laced up the sneaks and packed my money in my shorts and off I went. My run home was about a mile, and I did it along my favorite path on the East River. The only fail was I forgot to wear my Garmin.

I have to admit, I was out of breath! I really hate this whole out of shape thing. Right now I’m icing, of course, since my knee is still outta wack. Last night I bought cucumber yogurt dip from WF and I picked up a cucumber and cherry tomatoes today, so I’m looking forward to a little snack later. After, I clean my room that is. Disaster!

Ok mucchhhhh better now.
